It is so worth the effort to make your own spice paste, I mixed fresh basil from our little garden, garlic, chilli, spring onion, salt, coriander powder in a mortar and pestle with a little olive oil.
1 diced onion
4-6 gloves Garlic
2 red chilli
4 spring onions
1 teaspoon ground coriander or handful of fresh
Handful of fresh basil
1 red pepper
2 teaspoons fish sauce
1 tablespoon brown sugar
1 can coconut cream
2 teaspoons lime juice
1 kg of chicken breast
First cut chicken into bite size pieces and marinate in small amount of coconut milk, a dash of lime, fish sauce, and sprinkle of brown sugar.
Using a mortar and pestle crush the garlic, chilli, basil, spring onion, coriander with sprinkle of himalayan salt and small drizzle of oil to get a nice consistency (paste).
Saute the onion and pepper until soft.
Add paste and cook it out a little to release the aroma and flavor
Add the chicken and can of coconut milk
Then add fish sauce, lime juice and brown sugar according to taste.
Lightly simmer until it has all married together then serve with rice and garnish with spring onion and cashew nuts.
