With a few ingredients and some old clean jars you can make delicious homemade relish for a fraction of supermarket prices. The relish is great accompaniment for so many things as well as an added ingredient for a casserole or Swiss steak recipe.
I purchased over ripe tomatoes for their beautiful color and flavor and added some chilli for a kick.
The recipe is basic.
1 kg of over ripe tomato’s
1 -2 red chilli
2 medium size onions
4 gloves garlic
2 cups raw or brown sugar
1 cups vinegar
4 teaspoons salt
4 teaspoons mustard powder
4 teaspoons curry powder
4 teaspoons cornflour
Cut a small cross on the top of each tomato, place in large bowl, cover with boiling water, leave for a minute. Drain and rinse with cold water, peel off skins.
Roughly chop the tomatoes; finely chop the onions and garlic.
Place the tomatoes, onions, garlic, sugar, vinegar and salt in a large saucepan and bring to the boil, reduce to a medium heat and gently cook for 15-20 mins.
Mix the curry powder, mustard and cornflour with the extra vinegar to a smooth paste, stir into the tomatoes and cook until thickened.
Spoon into warm, sterilised jars and seal. Refrigerate once opened.
Makes: 1 large 500ml jar.
