I hate waste especially these days with rising food costs. Had 3 over ripened banana’s looking pretty sad in the fruit bowl so I whipped these up while dinner was cooking. The basic recipe is from the banana cake recipe out of the New Zealand Edmonds Cook Book.
Recipe for Banana Muffins
125 grams butter
3/4 cup sugar
1 teaspoon baking powder
2 cups of flour
3 ripe bananas (mashed)
1/4 cup hot milk add 1 teaspoon of baking soda (frothy)
Cream butter and sugar,
Beat in eggs
Add dry ingredients
Add mashed banana alternately with some of the milk into the dry ingredients.
Put into greased muffin tins.
Bake in a moderate oven for 15 mins until golden
Icing cup of icing sugar add knob of butter and mix until smooth. Add a dash of lime.
