There is probably no other produce more versatile and has so many uses as the incredible tomato. Summertime means to me homegrown tomatoes will be ripening in the warm sunshine which means delicious preserves and relish.
Dad always had a good vege garden and use to grow outstanding tomatoes, particularly the beefsteak variety that stood out for their size, texture and flavor when it comes to making homemade products. He would harvest his crop and proudly bring them to the kitchen for mum to use. I use to love Mum’s simple stewed tomatoes on toast when the tomato supply was plentiful.
Recipe
Wash and cut tomatoes
Put in a pot with a small amount of water
50 grams butter
salt and pepper
1 tsp sugar
additional is onion, garlic, parsley and oregano
Simmer the tomatoes for 5 mins
Serve on thick slices of toast
