Mum would send me with my brother and sister over to a local farmers field and gather as many mushrooms we could carry. There was no shortage of these delicacies and it was a big operation climbing over gates, through electric fences and getting chased by angry steers. But it was an adventure and so worth the risks to see that smile on my mums face. She so loved her mushrooms and I know where I get the craving from. Commercially grown mushrooms will never taste like the ones we grew up with.
Mum would simply cook them by…
Remove the stalks and peel the outer skin.
Toss in a hot pan with butter, salt and pepper.
Eat with utter joy and pleasure.
Has anyone got their own special way of cooking field mushrooms?
